The mango variety King David is visually attractive, particularly with its orange-red blush overlaying, depending on ripeness, a pale green to deep yellow background. Without the red blush, the appearance is nondescript, but don’t judge a book by its cover!
The shape is slightly round to slightly elongated with a pronounced, though small ‘nose’. The skin is thin and the flesh quite soft when ripe, so detecting ripeness is relatively easy. The flesh itself is virtually fibreless and has a deep yellow-orange colouration. The stone is thin giving a good flesh to volume ratio. When ripened well, King David is a deliciously sweet, succulent, high quality mango with an attractive acidic balance. One if its most unusual attributes is the juiciness of the flesh which gives it a refreshing aqueous, melting texture, rather than the dense mouth feel normally associated with mangoes.
King David is a mid to late season variety and, once harvested, has a relatively short shelf life, so needs selling rather than storing.
